We pride ourselves in bringing you premium quality ingredients and Maruhide’s uni is pretty much as fresh as it gets! Before sunrise, Maruhide’s uni divers are already out on the water just off the coast of Santa Barbara and San Pedro in search of the perfect location for the day’s harvest. The divers will freedive up to depths up to 30ft deep and carefully harvest the uni by hand. The live urchins are then transported directly off the boat into a truck to be delivered to Maruhide where they will be hand sorted, packaged, and shipped out to customers that day for optimal freshness.
These spiny creatures can be found across the oceans and are often described as foie gras of the sea. It is harvested throughout the world and though it is often thought of as a Japanese delicacy, the US has become one of the largest sources and Maruhide is undeniably one of the most renown uni suppliers in Los Angeles. Foodies have been able to enjoy Maruhide's top quality fresh uni since 1975. Though their restaurant Maruhide Uni Club is now closed until further notice, the small family owned business is still supplying California with uni and we’re incredibly excited we now have their uni available for purchase on Feed Me Trading!
Most foodies are introduced to uni at sushi restaurants where fresh uni is typically served raw.. Uni is creamy and buttery in texture and has a lovely umami flavor that is slightly sweet and briny, with delicate traces of the ocean. It is somewhat of an acquired taste and there are tons of delicious ways to enjoy uni. Uni is somewhat seasonal though it is available throughout the year, peak season typically runs from late fall to the winter and December is considered one of the best months.
